Pumpkin in All the Things (Pumpkin Pie Smoothie Recipe)

I love Autumn. I'm sure part of it has to do with the fact that I was born in this glorious season. As for the rest of it? The rest of it has to do with the changing of the leaves, the delicious air, the changing slant of the sun and how that affects what our Earth looks like, apples, and pumpkins.

Take, for example, the pumpkin pie smoothie I made yesterday. Rich and hearty and flavorful, and pretty, too, thanks to the pumpkin puree. It tastes like fall to me, and that's a happy taste.

Aside from the pumpkin pie smoothie, I've been enjoying Thomas' Pumpkin Spice English muffins and bagel thins, and Sam Adams Harvest Pumpkin Ale. And I'm on the lookout for Southern Tier Pumking Beer, because “Pumking.”

In the forecast are pumpkin cookies, pumpkin bread, and even just straight-up warmed pumpkin puree adorned with a teaspoon of coconut oil and a wee bit of salt and pepper, plus a smidgen of cinnamon. Pumpkin overnight oats are making a comeback, too, and for good reason: they're yummy.

So, how did I make the smoothie? It's super easy!

Pumpkin Pie Smoothie

Ingredients

  • 1 cup unsweetened vanilla oat milk (or your milk of choice)

  • 1 scoop unsweetened vegetable protein powder (I used chocolate and yet vanilla would be great, too)

  • 1/2 (heaping) cup pumpkin puree

  • 1 very ripe banana

  • a few dashes of cinnamon (or one drop of cinnamon essential oil)

Method

  1. Add banana, pumpkin puree, protein powder, spices and milk to the blender, in that order.

  2. Whir them together in the blender.

  3. Pour into your glass of choice.

  4. Insert environmentally-friendly straw.

  5. Sip and enjoy.

Other Options

  • Sub vanilla-flavored milk for 1 cup unflavored milk and add either 1/4 teaspoon 100% vanilla extract or 1 drop vanilla essential oil.

  • If you want a thicker - and colder - smoothie, feel free to add a handful of ice to the blender, and maybe even a second scoop of protein powder.

  • For a nicely naughty version, add a shot of cinnamon schnapps liqueur instead of cinnamon.

  • Add some vegan vanilla ice cream.
